Hot, Red Thai mix:
2 red and 2 green hot chile pepper 1 cup fresh coriander 2 red paprika 1 ginger 10 cm 10 cloves garlic 3 medium sized onions 2 lemon grass 1 large can of tomato puree or 2 small 1 tablespoon coriander seeds 2 teaspoons smoked paprika 1 teaspoon salt 4 tablespoons water and 4 tablespoons olive oil Fish fillets: 1 kg pollack, or saithe or cod as desired 2 tablespoons olive oil 1 can of 400 ml Yam-Yam coconut milk 18% 2 tablespoons Hot, Red Thai mix see above 2 carrots 1 cup spring onion, save the green for garnish 2 tomatoes cut into boats 2 teaspoons Kikkoman Soya sauce and 2 teaspoons of Santa Maria Fish Sauce |

Procedure without liability: You can benefit from making Hot, Red Thai mix the day before. The volume above, give 8 bags with 2 large spoonfuls Hot, Red Thai mix that can be frozen and used for other dishes to give a hot taste. See the bags above. Vegetables cleaned and cut into smaller pieces, then poured in a food processor with the other spices, water and olive oil. Blend for a smooth and soft paste.
Come olive oil in a wok pan (or a frying pan with high sides) and 2 spoonfuls Hot, Red Thai mix. Stir in very finely sliced carrots and spring onion. Let it take color for approx. 2 minutes and pour coconut milk on the wok pan. Cook to a boil and come in strips of the fish. Season with Kikkoman Soya Sauce and Santa Maria Fish sauce. Do not use salt in the dish because it comes from the sauce. The fish is cooked in 3 to 4 minutes. Serving: Serve in deep plates with the sauce dipping the bread into the sauce. The dish can usefully be served with rice. Garnish: Decorate the dish with tomato boats, the green of spring onions or freshly cut coriander. Drink: A cool white wine is ideal if you want beer, a Pilsner Urquell do good. Hint: You can usefully make a large portion of Hot, Red Thai mix and freeze the rest into portions bags a 2 table spoonfuls. It can be used together with cooked dishes of all kinds. Try also to replace the fish with huge, thawed prawns. Prawns are done at the same time as the fish. |
